Table 36 Cigars Chefs Table Chicken SaladNope, not the title to an episode of The Big Bang Theory.  This is a process by which anyone can make a fantastic chicken salad.  As the title of this post suggests, this recipe is really a formula with variables that can be switched out for one another.  Essentially, here is the formula.  Base + nuts + dried fruit + fresh fruit = Perfect Chicken Salad.  Each component adds a unique texture and flavor profile to the mix.  The base is a combination of chicken (dark and white meat), mayonnaise, Dijon mustard, green onions or chives, salt, pepper, and Garam Masala (A spice blend available at most grocery stores).  The result is a combination of crunchy, crisp, chewy, sweet and savory that I promise will astonish.  The recipe listed below is simply my favorite combination, but I have tried several variations and they all turn out well.

1 1/2 lbs. Chicken (cooked and cubed)

1/2 c. Mayonnaise

1 Tblsp. Dijon Mustard

1/2 c. Craisins

2 oz. Sunflower Seeds

3 oz. apple, small dice

1/4 c. Green Onions, finely sliced

1 tsp. Garam Masala

salt and pepper to taste
